A central element of the 13 Desserts of Provence, the calisson is a house speciality. Calissons are made from finely ground delicious sweet almonds delicately combined with honey. This almond cream is then mixed with candied melon and candied orange peel. After shaping, the little calissons are coated with royal icing made from icing sugar and egg whites.
An Aix-en-Provence tradition, originally made by Le Roy René confectioners, our calissons are rich in almonds and candied fruits. They are elaborated with sweet almonds. We have been carefully making calissons in our confectionery factory in Frontignan (Hérault) since 1989. They are perfect for eating during a tea or coffee break.
