A central element of the 13 Desserts of Provence, the calisson is a house speciality. Calissons are made from finely ground delicious sweet almonds delicately combined with honey. This almond cream is then mixed with candied melon and candied orange peel. After shaping, the little calissons are coated with royal icing made from icing sugar and egg whites.
The soft, white nougat recipe at La Cure Gourmande contains almonds, honey and pistachios. As a nougat maker, La Cure Gourmande has mastered working with egg whites, and cooking the sugar gently, to make the nougat soft and chewy.
Our little chocolate-filled biscuits are made with pure butter in our biscuit factory in Frontignan (Hérault). Crunchy on the outside, they contain a chocolate filling that will make you melt with pleasure!
Christmas would not really be Christmas without its traditional chocolate pralines ! Its crisp chocolate shell contains a melting praline. Yum !
